Situated in the new Midtown area of Palm Beach Gardens @ 4635 PGA Boulevard, Cantina Laredo takes Mexican food to new heights. I've been in there several times so far- Lunch, Dinner and Brunch - and I was very impressed with the look of the restaurant, the fantastic service and (most importantly) the quality of the food. You should start off with the Guacamole which is prepared fresh per order -or my favorite, the Ceviche - a mix of fresh fish and shrimp marinated in lime juice. If you like steak, but would it like something a little different, try the Camaron Poblano Asada: shrimp, mushrooms, onions and monterey jack cheese stuffed inside a poblano pepper that's wrapped in a tender carne asada steak and served on a bed of chimichurri sauce. If you prefer chicken, you'll like the Camarones Escondidos - a large grilled chicken breast stuffed with shrimp, topped off with sauteed spinach and chipotle-wine sauce. Fresh fish is always available - and the featured fish changes daily. I've been very impressed with the customer service. My first visit was when the place had just opened - things can be a little rusty when a restaurant is going through it's first few days. But that was not the case here - right from the start everything was top-notch.
